I forgot to mention that all of the recipes shared during this challenge might not be perfect. While I did enjoy the pumpkin-ness of this mix (which I promise was not mostly chocolate chips, like the picture would lead you to believe), it was a little soggy between the pumpkin AND the applesauce. I'm not sure how to fix it. Add more rolled oats? Let it sit longer? I don't know. Maybe one of you can enlighten me. But don't get me wrong, it was still super delish.
Like the recipe says, I did crush Annie's Honey Bunnies (my fave!) and throw in some dark chocolate.

To me pumpkin = autumn, which is synonymous with thankfulness.
So, today I am thankful for the friends I have made while living in Peoria.
We've all gone through quite a bit this past week, and it was so refreshing to sit and eat ice cream and talk to them about life and love and happiness last night. And jam to this song together, which has been on repeat for a while now. What a reminder of who God is!
